You may have a speed button for Personnel/Staff setup, or it can be accessed here:

Some settings do not apply to Liquor Stores, so below is how you should set up a basic clerk. Please consider some options that do not apply to your business such as “cashback.” Also, if you always have a supervisor on duty, you may not want to allow regular clerks to do certain things.

When you select “Access,” you will see a screen with header dropdowns that let you choose any option and restrict it to specific security levels:
